How authentic can an Italian restaurant be in Paros? And why is it that most of the time our beloved international cuisine gets «pale» by the time it crosses the Ionian Sea, as if it got dizzy on the way? Many times we conclude that places do not travel. It’s as if, when the geography changes, the atmosphere that gives that magic aroma to the flavors changes. Bacco in Parikia gives you another answer.
Made with love and care by 2 Italians, Donatella and Guido, Bacco brings all the authenticity, quality and raw ingredients that make Italian cuisine irresistible. That’s why you know that here, you’ll eat Italian like you’ve never eaten before. Not plain mozzarella, but fior di latte for a fuller taste. Not just tomato sauce, but San Marzano, as it has been enjoyed for years in the paved streets of Italy, from northern Friuli Venezia Giulia – where Guido and Donatella are from – to the South.
The perfect start is commenced with Vitello tonnato, a landmark in antipasti with thin slices of veal cooked at a low temperature with tuna sauce, simply brilliant! Then there are the tartares and fthe resh salads that give an excellent impression of what is to come. Their pasta – delicious and al dente – has variations such as pappardelle al ragù, Rigatoni alla carbonara, robust and authentic with its egg and pepper, Amatriciana made from the fabric of dreams.
Then there are their pizzas, the «Pinsa Romana» which triumph with their nice dough, the fine ingredients and that svelte passage from the oven that gives them a nice crust, called «cornicione». You should certainly not miss trying the risotti, beautifully cooked and with various nice combinations, such as the risotto with truffle. For the sweetest ending, save room for a delicious panna cotta or an airy tiramisu and you’ll remember us.
