At the heart of the menu are fresh fish and seafood, sourced through long-standing relationships with local fishermen. In the kitchen, there is one guiding principle: nothing goes to waste. Fillets become both raw and warm preparations, bones are transformed into broths and bases, and the head is cooked in ways that reveal the full depth of the ingredient. Alongside this, the cuisine is enriched with products from small local producers, cheeses and essential fresh ingredients, carefully selected to add depth and authenticity to every dish. Under the guidance of chef and owner Giorgos Koutsolias, the cooking remains honest, clean, and well-balanced, with a clear intention to let the quality of the ingredients speak for itself.

At the table, impeccably grilled fresh fish stands out for its precision and purity. The tender squid, paired with a deeply flavorful sofrito sauce, rustic country bread, and silky taramasalata, feels like a dish of comfort and memory. Santorini fava comes together harmoniously with juicy octopus and aromatic fennel, offering both balance and richness. When in season, fresh glasswort served with broccoli, zucchini, spring onion, PDO Messinia feta, and a refreshing tomato vinaigrette captures the philosophy of the kitchen and its close relationship with seasonality with striking clarity.
